If we had not done these classes we would not have been inside the homes of locals to see how they live, which is an experience we very much valued. We also have mastered pasta and gnocchi, things we had tried at home but just couldn't get right, and got some very good inspiration from the dishes we cooked. We were especially stoked about learning to cook with artichokes - we did them in 3 different ways over the classes, we had bought them in Australia but did not know any dishes to create with them, and the cooks also chatted and gave us a lot of additional information and ideas for recipes. These are things we will bring back and remember, and cook for our families and friends. We look forward to the recipes of Patrizia.

Patrizia learned from a young age how to cook from her mother, who was from Emilia-Romagna, a Northern Italian region known for their homemade pasta-making expertise. Thanks to her long experience as a food and wine journalist, Patrizia has learned to seek out the best ingredients available for every dish she creates.
She is devoted to using only seasonal, organic ingredients and she loves to get creative with the local produce she finds in her nearby farmers' markets. She believes the fresher and higher-quality the ingredients are, the more nutritious and flavorful the dish becomes. The artisanal flour she uses to create her wonderful pasta and bread is straight from one of the last remaining Tuscan water-run mills in the Chianti region. The one ingredient she always has on hand is her zesty, delicious extra-virgin olive oil used even in the creation of her desserts.
For Patrizia, cooking isn't just a fun hobby, but also work. She is, in fact, a respected food and wine journalist with nearly 20 years experience as a restaurant reviewer in Italy and overseas. Her articles are published in culinary magazines throughout the country. Owing much to this background, she has enriched her culinary knowledge with beloved Italian traditions and techniques. Thanks to her international travel, she speaks wonderful English, making communication in the kitchen a breeze.
