TESTIMONIALS
| In the end we did 3 classes, 2 with your company and one with our accommodation in tuscany. If we had not done these classes we would not have been inside the homes of locals, see how they live, and even meet their daughters, which is an experience we very much valued. We also have mastered pasta and gnocci, things we had tried at home but just couldn't get right, and got some very good inspiration from the dishes we cooked. We were especially stoked about learning to cook with artichokes- we did them in 3 different ways over the classes, we had bought them in australia but did not know any dishes to create with them, and the cooks also chatted and gave us alot of additional information and ideas for recipes. Because of customs and baggage restrictions we could not bring much back to australia in the way of food and wine from our trip, but these are things we will bring back and remember, and cook for our families and friends.
Both Patrizia and Isabella were lovely and great teachers. We look forward to the recipes of patrizia.
Cheers

Patrizia's Central Florence Cooking Class Program
In the very city center of Florence, just a few steps away from Michelangelo's David, Patricia C. offers the possibility to experience typical Florentine cooking in her home in a palace built in the 1700's. Patrizia learned how to cook from her mother, who was from the Emilia-Romagna region, especially the art of pasta making. From a young age she was rolling gnocchi and shaping tortellini in the family's kitchen.
Working for many years as a food and wine journalist, has more than anything else taught Patrizia to search out the best ingredients possible for every dish she creates. She is religious about using only seasonal ingredients and she loves to get creative with the produce she finds shopping at the locals farmers markets. She believes the fresher and better the ingredients, the more nutricious and delicious the dish! The flour she uses to create her wonderful pasta and bread is straight from one of the last remaining water-run mills in Tuscany. The one ingredient she is never without is her zesty, delicious extra virgin olive oil which she uses even in the creation of desserts!
After arriving in the morning at 10, your day in the kitchen with Patrizia begins! Using all the vibrant, fresh ingredients she has procured, you will together prepare an entire Tuscan meal from antipasto, pasta, meat, side dish all the way to dessert! On request, it is possible to have a cooking class dedicated to Emilia-Romagna delicacies such as hand made tortellini and specially prepared broth she learned from her mother. Once the work in the kitchen is done, it is time to relax and enjoy what you have prepared together around the table. A toast to the cooks with local wine!
Patrizia's Profile
For Patrizia, cooking isn't just a fun past time, but also work! She is, in fact, an enogastronomic journalist who has been working for almost 20 years as a restaurant reviewer in Italy and abroad. Her articles are published in a famous culinary magazine. Thanks to this experience, she has been able to enrich her culinary know-how with the traditions and techniques not only of Italy but in kitchens around the world. Because of her international travel, she also speaks wonderful English which makes communicating in the kitchen a breeze. |
