The castle is also one of Tuscany’s prime producers of great wines. Your day of cooking starts with a guided tour of this stunning Tuscan winery. Jim, your amiable guide will tell you a whole lot about the fortress's history and its role in the battles between Florence and Siena, most importantly Jim will tell you all there is to know about the Chianti Classico wine making process! You will explore the many magnificent rooms, the gardens, the long rows of ponderous oaken casks stored in nearly eight-hundred-year-old vaulted cellars. You'll then move on to the winery's kitchens for your cooking class. Isia the teaching cook, a maternal and most personable lady (seconded by an English-fluent interpreter), has chosen for this lesson three pasta varieties plus roast pork or roast veal, four different wines, dessert and coffee. The cooking class will include tagliatelle and those small wonders of Italian culinary ingenuity, tortellini and ravioli, all made there with the sauces, dressings and stuffings by Isia and you.
