PASTA WITH FRESH TOMATOES (Pasta sauce)
Emerge ripe tomatoes in boiling water for a few moments. When the water begins to boil again, take the tomatoes out, peel them, cut them into pieces and remove the seeds.
Dice the pulp, and place it in a large bowl with four spoonfuls of highest quality extra virgin olive oil, some diced basil leaves, fresh mint (optional), two garlic cloves, and a pinch each of salt and pepper.
Mix carefully, cover and let sit in a cool place for at least 30 minutes.
Cook the pasta until it is still al dente and drain. Pour it into the bowl with the tomatoes and mix well so that the sauce is evenly distributed.
If you would like, garnish with a whole basil leaf to give the dish a more intense aroma.
Serve immediately.
