SCHIACCIATA ALLA FIORENTINA - Sweet Florentine Schiacciata (DESSERT)Ingredients:3 whole eggs8 tablespoons of sugar6 tablespoons of extra-virgin olive oil12 tablespoons of flour1 sachet of cake yeastthe grated zest of a blond orange and its juicea pinch of saltWork the eggs, sugar, oil and salt together until they have amalgamated well then add the grated zest and juice of one orange. Add the flour, one spoonful at a time, to obtain a smooth mixture. Finally mix in the cake yeast. Pour the mixture in a buttered shallow rectangular baking tray, preferably aluminum, and bake in a preheated oven at 140C for 20 minutes. Use a toothpick to check if it has cooked through perfectly.
