SPINACH, MASCARPONE AND PINE NUT SAUCE (Pasta sauce)Squeeze the water out of the boiled spinach, and blend the spinach until it becomes creamy.Mix this creamed spinach with three times as much mascarpone. Add grated Parmigiano Reggiano and mix well with a fork. When the sauce is well mixed add the pine nuts, and transfer to a pan with a small amount of oil. Heat to thicken the sauce. Use to dress fresh pasta (tagliatelle or ravioli)
